1 cup white granulated sugar
1 egg
2 cups plain flour
1/2 teaspoon of salt
1/2 cup vegetable oil
3 ripe bananas mashed
1 cup coarsely chopped walnuts
1 teaspoon bicarbonate of soda
Preheat oven to 180 degrees.
Line a twelve muffin pan with liners.
Using a mix master or hand held mixer and in a large bowl mix together sugar, oil and egg, mix this till mixture is pale yellow usually about 4-5 minutes.
In another bowl add mashed bananas and walnuts and set aside. In another bowl whisk together flour, bicarbonate of soda and salt.
Now mix the banana and walnuts to the sugar mixture. Mix by hand with a metal spoon until well combined.
Add the flour mixture in 3 additions mixing with care till all mixed in repeat till all the flour mixture is used and careful not to over mix.
Spoon into muffin pan filling only 3/4 of the way. Bake for 35-40 minutes depending on your oven.
These are great and can be frozen but will need to be individually wrapped. Can also be warmed up if desired and served with whipped fresh cream topped with a sprinkle of chopped nuts. These are truly yummy enjoy
