Ingredients:
2 cups almond meal
2 cups white sugar
2 lemons squeezed
In a large bowl add almond meal and sugar and whisk till all lumps are removed.
Make a well in the center of the bowl and add the lemon juice.
Mix till everything is extremely well combined and comes together as a paste. (a good workout for the arms).
Once the mixture resembles a paste, place in some glad wrap to make air tight and place in the fridge for 4 to 6 weeks and will be ready to use.
I use this marzipan to make a St. Nicholas ring as a centre piece and also with the left over marzipan I melt dark chocolate and make bite size pieces and dip the marzipan in to the chocolate. Store in an air tight container.
