Ingredients:
2 red delicious apples (you can use any apple you like)
1 cup sultanas
1 cup chopped walnuts
300 grams self raising flour
1/2 cup honey
100 grams butter
200 mls milk
2 eggs
2 teaspoons cinnamon
1 teaspoon baking powder
100 mls water
1/4 cup sugar
Preheat oven 200 degrees
Peel and cut apples in to small pieces
Heat water and sugar in a heavy based pot and add apples, walnuts and Sultanas stirring constantly until apples turn slightly brown and are soft (usually takes about 10 minutes) then remove from the heat and place in a large bowl and allow to cool a bit. In another bowl add flour baking powder and cinnamon, whisk to remove lumps and everything is well combined.
Now melt butter with the milk, and remove from heat and set aside to cool down about 10 minutes.
Whisk the eggs in a large bowl now slowly add the melted butter and milk mixture to the eggs whisking the entire time.
Then and the fruit mixture and mix with a metal spoon.
Now add the flour mixture in 3 additions mix well till flour is well incorporated, repeat till all flour is used.
Line a 12 cup muffin tray and fill the liners 3/4 of the way up.
Place in the oven and bake for 25 minutes.
When muffins are ready they will spring back when touched on the top and when a toothpick comes out clean.
