1 large finely chopped onion
1 tsp ginger and garlic paste
1 tsp cumin and coriander
3 tsp chilli powder
2 tsp medium masala
3 grated tomatoes
Sliced branjol – eggplant
Soak shrimps in hot water and rinse well and strain water and keep aside.
Braise onion, shrimps in hot oil, add ginger and garlic and fry +- 2 mins
Add tomatoes, and fry
Add cumin, coriander, chilli powder and medium masala and mix, one at a time
Mix and add branjol and curry leaves, leave to cook on high till curry dries up
Add a little water optional or just reduce heat and cook till branjol is soft and oil surface, add salt to taste
