Layne’s Deep Fried Calamari and Hake with potato wedges

TRH Layne's Deep Fried Calamari and Hake with potato wedges

Slice 4 potatoes in wedges, add a sprinkle of food coloring and 1/4 tsp of salt and deep fry, once cooked strain and set aside.
4 x Hake fish cleaned and butterfly

For your marinade add half box Osman’s chilli bite mix,
2 -3 tbs self raising flour
1 beaten egg
1 tsp black pepper
Add a little milk to make a thick batter
1 tbs lemon juice
1 tsp garlic powder
1 tsp Robertson mixed herbs
1 tsp salt

Mix all ingredients till well combined and paste on the fish and refrigerate for one hour.
Then deep fry in hot oil.

Calamari batter
Rinse and slice the tubes.
2 tbsp self raising flour
1 beaten egg
1/4 box of Osman’s chilli bite mix
1 tsp black pepper
1/2 tsp salt
1/2 mixed herbs.
1/2 tsp garlic powder
Refrigerate for one hour and deep fry.
Best enjoyed with salad, tartar sauce and garlic sauce.
Add extra chilli bite mix if batter is still weak.
