Layne’s Sugar beans with chicken neck and giblets

Boil 1 cup sugar beans and set aside.
Clean giblets and give it a steam with a little vinegar. Strain and set aside.
Clean neck, rinse and set aside.
1 large onion finely chopped
2 grated tomatoes
1 tsp tomato paste
2 tsp ginger and garlic paste
2 tsp durban masala
1 tsp geera and dhania
2 tsp paprika
1 tsp curry powder
Oil
Salt to taste
Cinnamon
Bayleaves
Curry leaves
Potatoes

Braise onion and cinnamon, bay-leaves in hot oil
Add ginger and garlic paste, and fry a little
Add paprika, curry powder, geera and dhania and saute
Add tomatoes and paste and curry leaves and mix
Add necks and giblets and cook for about 5 mins, then add the boiled beans, potatoes and salt and cook on high, till gravy becomes thick.
Garnish with fresh dhania.
