Boil and strain 1 1/2 to 2 cups rice, with salt and set aside.
Oil for cooking
1 finely chopped onion
1 grated tomato
1tsp tomato paste
2 tsp sugar
1/2 tsp turmeric
Few dry chillies
1/2 tsp ginger and garlic paste
1/2 tsp jeera seeds
1/2 tsp mustard seeds
2 tbs tamarind pulp soaked in 1/4 cup water and strained and set aside.
Fry onions in hot oil with dry chillies, jeera and mustard seeds
Add ginger and garlic paste and fry.
Add turmeric and mix
Add tomatoes and paste and sugar and mix.
Whilst frying, once tomatoes are cooked, add tamarind pulp and mix
Add salt and cook till oil surface
Once done add rice and mix well, garnish with more curry leaves.
