For the base:
I pkt Tennis Biscuits, crushed
3 heaped Tablespoons butter, melted
A sprinkling of cinnamon.
Mix together and press into a pie dish.
(I used a rectangular dish so that the tart could be cut into squares).
1 tin condensed milk
1 lemon jelly, dissolved with a 125ml of boiling water. Set aside until completely cold.
1 tub Cream Cheese, room temperature.
250ml Fresh cream, beat until thick.
The juice of 2 small lemons & 2 small limes.
Lemon & Lime zest of 1 lemon and 1 lime.
Combine the cream cheese with the beaten cream.
In a seperate bowl, mix the condensed milk, some of the zest and juice.
Add condensed milk mixture to cream cheese mixture. Mix well, then stir in the cold jelly.
Pour onto biscuit base and sprinkle the rest of the zest on top.
Refrigerate until set.
