Malva Pudding

This Malva Pudding is more delicious than the sum of its parts! It’s a real traditional oldie and a firm favorite so do try it out!

Malva Pudding

Malva pudding is a sweet pudding of South African origin. It contains apricot jam and has a spongy caramelized texture. A cream sauce is often poured over it while it is hot, and it is usually served hot with custard and/or ice cream. Many South African restaurants offer it.

Pudding Ingredients

  • 1½ cup flour
  • 1 cup sugar
  • 1tsp bicarb
  • 2 eggs
  • 2 Tbs butter
  • 3 Tbs apricot jam
  • ½ cup milk

Sauce Ingredients

  • 1 cup fresh cream
  • 1 cup water
  • 1 cup sugar

Method Batter

  1. Preheat oven to 180C
  2. Beat eggs, butter, apricot jam, and milk together.
  3. Add the dry ingredients.
  4. Bake for 25 minutes.
  5. Switch off the oven.
  6. Serve with a hot drop custard.

Method Sauce

  1. Bring to a boil and set aside
  2. Once batter/pudding done, pour the boiling sauce over and leave to rest in the switched-off oven for a few minutes.
