What for dinner ? Ours so simple but yummy
Mash,corn fritters, beans and russian cheese sausage
For the corn fritters:
Mix 1 cup (250ml) flour
1/2 tsp(3ml) salt and 1 tsp(5ml) paprika in a bow.
Combine 2 eggs and 1/4 cup(80ml) of milk and whisk into flour mixture.
Add 2 cans of whole corn kernels, 1 chopped red pepper and a handful of parsley.
Heat 2 tbsp(30ml) olive oil in a pan over medium heat and fry for 3-4 minutes per side . Remove and drain in kitchen towel.
Add the russian sausage fry until cook through .
Blanch the green beans and heat butter in another pan stir fry and season with salt and pepper.
Serve fritters with sausage,beans and mash potato
