I spent 3 weeks with my daughter and was asked to make Mac and Cheese by my daughter’s step brother. By the time I left I had made it about 5 times. I was asked to make it again last night. I think it’s all in cheese sauce. It is yummy!
1 full packet macaroni
1 tblsp salt 2 tblsp olive oil
2 tblsp butter
2 packets bacon bits
2 punnets mushrooms
½ tsp chili flakes
4 cups cheese sauce
Fry bacon bits till crispy, remove and set aside on paper towel.
Add mushrooms to pan and season with garlic and herb spice and fry till just coated remove and add to bacon.
Boil a pot of water, once boiling add salt, then macaroni then oil.
Cook until el dente, (while making 3 cheese sauce) drain. Add the butter and mix.
Add the bacon and mushrooms and mix to combine.
Grease a large pirex dish.
Add the macaroni mixture and chili flakes and pour cheesy sauce over. Mix to combine.
Sprinkle extra cheeses over and bake uncovered till golden.
3 Cheese Sauce
4 tblsp flour
4 tblsp butter
2 cups milk
½ tub cream cheese
¼ cup parmesan cheese
2 cups cheddar cheese
(extra cheddar and parmesan for topping)
1 tsp salt
½ tsp ground black pepper
A shake each of garlic and herb spice, mustard powder
Freshly grated nutmeg
Melt butter and whisk in flour until flour cooked.
Add cream cheese and 1 cup of milk and whisk until cream cheese has melted.
Add remainder of milk, parmesan cheese, fresh cream and all seasoning whisking until thickened.
Remove from heat and stir in cheddar cheese until cheese has melted.
