Ingredients:
3 cups dried sugar rinsed
1 Tbsp olive oil
2 red onions sliced
3 garlic cloves crushed
1 packet streaky bacon, chopped
4-6 kassler chops
½ cup tomato sauce
½ cup soft brown sugar
2 Tbsp golden syrup
¼ cup barbecue sauce
1 chicken stock pot
1 tsp dried chilli flakes
1 bay leaf
2 springs fresh thyme
1 red chilli chopped
Salt and pepper
Method:
Cover the beans in water and soak overnight.
Add to pressure cooker and cover with water and cook on high low pressure for an hour.
In the meantime, heat olive oil in a pan, add the onions and fry till tender.
Add garlic, bacon and Kassler and fry till cooked.
Add to the beans and the rest of the ingredients and stir to combine.
Add enough water to cover the beans.
Cover tightly and cook on high for another hour.
STOVE METHOD
Cover the beans in water and soak overnight. Drain and set aside.
Preheat oven to 180’C.
Heat oil and add the onions and fry till tender.
Add garlic, bacon and Kassler and fry till cooked. Add beans to a large casserole dish or Dutch oven.
Add the onions bacon and kassler and the rest of the ingredients and stir to combine.
Add water until beans are well covered. Cover tightly and bake for 2 ½ hours.
Check after every hour to ensure there is enough liquid, adding more stock or water if needed.
