The first time I saw this recipe being made was about a year ago when Ina Garten visited one of her favourite restaurants in New York and was taken to the kitchen and watched this signature dish of CHAR GRILLED LEMON CHICKEN being made.
I didn’t think much of it then because it seemed so simple and nothing fancy about it. I watched the rerun of the same cooking segment a week or so ago, and tried it, and I’m ever sorry I never tried it before. Such a no fuss very simple dish but man oh man, absolutely delicious! Please do try it but please DON’T substitute real lemons for bottled lemon juice. I served with Sauteed mushrooms and roast potatoes.
Ingredients
3 chicken quarters
Place slits in the skin and chicken (my idea)
Season with kosher salt and ground black pepper
Put pieces skin side down first and cook 15 minutes.
Turn to the other side then grill till charred and crisp.
Remove and cut into bit sized pieces. (I didn’t and left them whole)
Mix together
½ cup olive oil
1 cup of pure lemon juice
1 tblsp crushed garlic
salt and pepper to taste
½ tsp oregano
2 tblsp red wine vinegar
Whisk well
Pour over chicken and put back into oven to grill 5 minutes a side.

SAUTEED MUSHROOMS
2 tblsp butter
2 tblsp olive oil
1 ½ tsp dried oregano
1 tsp steak or lamb seasoning rub
1 tsp garlic powder
½ tsp cracked black pepper
1 tblsp steers garlic sauce
Heat butter and olive oil in a saucepan over medium heat.
Stir mushrooms in the oil and butter until well coated.
Sprinkle oregano, garlic powder, and steak seasoning on mushrooms; stir to coat.
Cook and stir mushrooms until lightly browned, about 5 minutes until tender.
Stir in garlic sauce and black pepper.
