A new take on hash browns – German Potato Pancakes – to accompany Chicken Schnitzel. Tired of mashed potato 🙂 Enjoy

CHICKEN SCHNITZEL
4 chicken breast fillets
1 tsp smoked paprika
Chicken spice
Kosher salt and cracked black pepper
1 cup flour
2 eggs
½ cup buttermilk
1 tsp hot chili sauce
2 cups panko bread crumbs
Oil for shallow frying
Lemon wedges, tomato and French green beans to serve

Method
Place chicken breast between plastic wrap and pound with mallet to ¼ inch thick. Season with chicken spice, salt, pepper. In a bowl mix paprika, salt and pepper and flour and mix to combine in one bowl. In another bowl combine eggs, chili sauce and buttermilk. Place panko in third bowl. Dip chicken in flour then egg then panko. (Make sure you shake off excess flour and egg after each dunk) Refrigerate 15 minutes before shallow frying till golden

GERMAN POTATO PANCAKES
Ingredients
1 cup grated peeled potato
¼ cup grated peeled apple
½ cup chopped spring onion
1 egg
1/3 cup flour
Salt, pepper, paprika

Method
Mix everything together and combine in a bowl. Coat bottom of pan with some oil and heat to medium heat. Ladle spoonfuls of mixture into pan and press flat with spatula. Turn when brown and brown the other side.
Serve with French green beans. Blanched in boiling water, fried in olive oil with some garlic, salt and pepper, sprinkle some lemon juice and top with Parmesan shavings, some tomato and lemon wedges.
