I’ve never made brownies in my life but watching Anna Olsen on the Food Network channel make them it seemed easy enough so I thought I’d give it a whirl.
She called it Chocolate Fudge Brownies but I’m calling it Pecan Nut Chocolate Brownies, based on the ingredients. A bit on the sweet side but delicious.
Ingredients:
1 Tblsp butter
½ tsp sea salt
1 cup pecan nuts
½ cup unsweetened chocolate
1 ¼ cup butter
1 cup sugar
¾ cup brown sugar
3 eggs
2 tsp vanilla Essence
1 cup of flour (don’t sift flour)
¼ cup sifted cocoa
Method
Preheat oven to 180 degrees.
Melt butter, add pecans and salt and cook for 8 minutes to brown. Set aside.
Remove 12 pecans and chop the rest coarsely.
Melt the 1 ¼ cups butter, add the chocolate and melt, whisk in the white sugar, then the brown sugar.
Add the eggs, whisking it one at a time. Add the vanilla essence.
Add the flour and blend in with a spatula. Add the cocoa. Stir in the chopped pecans.
Spray a 9×13 baking tray and pour in the mixture.
Place the 12 pecans on top. Bake for 20 minutes or firm to the touch.
Cool for an hour before slicing.
