It’s the first time I tried this tart (only because it was so easy peasy and I suck at baking ) I should never have – it was inhaled in minutes and now I’m going to suffer every week!
1½ packets tennis biscuits
4 tbls butter (melted)
1 Can Condensed Milk
½ Cup of Lemon Juice
1 Can of Crushed Pineapple
300ml of Whipping Cream
1 tblsp milk powder (I used klim)
1 Flake chocolate for garnish
Add tennis biscuits to food process and pulse till it resembles crumbs.
While still pulsing drizzle in melted butter and continue to pulse a few times till mixed. Press into a pie plate to form a base and freeze for ½ an hour.
Beat condensed milk and lemon juice, with electric mixer.
Add crushed pineapple. In a clean bowl using electric mixer beat cream with milk powder till stiff, and fold in.
Spread over biscuit base. Refrigerate for 3-4 hours until set.
