PORK CHOPS IN PEPPER AND MUSHROOM SAUCE
Ingredients:
15 ml olive oil
4 Pork loin chops, fat removed (salt, pepper, 5 spice powder, cumin)
1 Onion, finely diced
250 g Button mushrooms, sliced
2 tblsp mixed peppercorn blend (black, white, green, pink & all spice berry)
150 ml heavy cream
4 tblsp brandy
Splash of red wine
Method
Preheat oven to 200°C.
Heat oil over a medium heat and brown the chops on both sides then remove from the pan and place into an oven tray and bake for 10-15 minutes or until cooked through.
In the same pan heat some oil and fry the onions until soft then add the peppercorns. Add the mushrooms and fry until tender. Add the brandy and wine and allow to reduce.
Add the cream and allow to simmer for 5 minutes stirring continuously to thicken then set aside.
Remove pork chops from the oven when done, serve with creamy herbed mashed potato and spoon the sauce over the chops.
ITALIAN GREEN BEANS
1 rasher of bacon
2 cups green beans
11/2 tsp crushed garlic
Seasoning salt, to taste
Black pepper, to taste
2 tbsp grated Parmesan cheese
2/3 cup grated Mozzarella cheese
Cut ends of green beans off and cut to size.
Bring a water to a boil in a saucepan and add 1 tsp kosher salt. Add green beans and cook green beans until tender; about 10 minutes.
In nonstick frying pan fry bacon and remove, cook garlic in bacon fat till tender. Add green beans and toss to coat. Sprinkle with seasoning salt and black pepper. Place in a shallow casserole dish. Sprinkle with Parmesan cheese and then Mozzarella cheese. Microwave briefly or place in moderate oven to melt the Mozzarella cheese. Serve. I grilled in oven.
HERBED MASHED POTATO
4-5 potatoes, peeled and cubed
1 chicken or vegetable stock cube [a ¼ tsp turmeric could be used for an alternative yellow mash]
1 tsp baking powder
Crushed black pepper
1 tsp mixed herbs
1 egg (optional) I always add
1 tsp white onion soup powder
4 tblsp butter
½ cup cream (or milk)
Add potatoes to cold water to a pot, add stock cube and bring to a boil till tender. Drain and return to pot.
Add baking powder, onion soup powder and butter; Using electric mixer on lower beat slowly.
Add pepper and herbs gradually adding cream till desired consistency.

The pepper sauce was quite tame and contained no alcohol.
I adapted the pepper sauce to Guy Fiery’s alcohol (and mixed pepper) version (what can I say). So for those who don’t imbibe :- (skip the alcohol steps. The Italian Green Beans a friend shared on FB.
The HERBED MASHED POTATO is pretty much a regular.
For those of you who wonder why I put egg in mashed potato?
Well the answer is simple.
I watched my mother do it when I was young and asked her why – her answer was ‘sommer’ – she always made the best mashed potato as far as I was concerned so I also do it ‘sommer’ and everyone loves my mashed potato and are none the wiser.
