Melanie's Spicy Hungarian Goulash Pasta

Ingredients:
Tagliatelle cooked according to directions
500 gr beef strips
3 red onions finely chopped

3 red chilies chopped
5 Tbsp Paprika (I used 2 normal and 3 smoked)
2 Tbsp tomato paste
1 Tbsp Marjoram
¼ tsp ground Caraway seeds
1 Bay leaf
2 cloves garlic, chopped
Water
Salt and pepper to taste
METHOD
Sauté the diced onions until caramelized.
Add the garlic and stir 30 seconds.
Add chopped chili, the ground caraway seeds, the tomato paste, marjoram and paprika and stir till onions are coated and fragrant.
Add the beef and enough water to cover the beef.
Add the bay leaf, salt and pepper and bring everything to a boil.
Reduce to gentle simmer and cook uncovered for an hour or so or until beef tender stirring occasionally.
Serve on bed of buttered pasta of choice. I served with Tagliatelle topped with extra chili for garnish
