Ingredients
750 lamb mince
4 Tblsp olive or coconut oil
1 large onion (half chopped, half sliced)
1 cup fresh parsley chopped (divided)
2 tsp crushed garlic/ginger/chili paste
2 chilies minced (optional depending on heat preference)
½ cup provita crumbs (process provita biscuits till fine)
1 egg
¼ cup tomato sauce (divided)
4 tblsp Jack Daniels BBQ sauce (or any other)
1 tsp Colmans hot mustard
½ coriander powder
½ tsp cumin powder
1 heaped tsp brown sugar
Salt and black pepper
Method
Heat oil in a pan and add chopped onion and fry 2 minutes.
Add garlic paste and half the parsley and fry till everything softened. Leave to cool. Preheat oven to 170 degrees C.
In a bowl add mince, crumbs, egg, half the tomato sauce, BBQ sauce, mustard, egg, spices and sugar, salt and pepper. Mix to combine.
Add the onion/parsley mixture and mix again to combine. Spray a loaf tin with olive oil cooking spray.
Line with foil. Spray foil with olive oil cooking spray.
Fill loaf tin with mince mixture and even out.
Spread remaining tomato sauce over the top.
Add sliced onions over that.
Sprinkle remaining parsley.
Season with salt and pepper. Bake for 1 hour.
Leave to rest for 20 minutes before slicing.
