2 ½ cups macaroni
½ cup melted butter
3 strips bacon fried and chopped (optional)
1 can evaporated milk
Salt and pepper
¼ tsp chili flakes
2 cups sharp mature cheddar cheese plus more for topping
Paprika for dusting
Cook macaroni in boiling salted water and 1 TB olive oil for 10 minutes.
Drain and rinse in cold water to stop cooking process.
Melt butter, beat eggs, add evaporated milk, add salt and pepper, add grated cheese, add chili flakes.
Add melted butter.
Add macaroni and mix to combine.
Grease dish pour into dish top with extra cheese, dust with paprika.
Bake 35 minutes at 160 degrees
