This is what we had for dinner tonight.
My version (with what I had on hand) of a Fritatta.
You can use pretty well any meat or vegetable you like, but the following is how I made it tonight.
We enjoyed it with beef sausages, which you can do in a frying pan or on the barbeque.
I sauteed, mushrooms, red onion, red pepper seasoning them with pepper, garlic powder, and at the end a tiny bit of salt.
I whisked 6 eggs together and added worcestershire sauce (to taste) and garlic powder, and pepper.
Cut up green onions finely and sprinkle into eggs.
Pour well whisked egg mixture over mushrooms an peppers etc in frying pan.
Place in a 350F oven for 18-20 mins until eggs are almost set. (They continue cooking after you remove them from the oven)
I like this because you can add almost anything to make it your own.
I usually put cooked bacon in it which is wonderful.
