1 1/4 cups cake flour
1 1/4 tsp baking powder
1/2 tsp Bicarb
1 tsp vanilla extract/ caramel essence.
1/2 tsp salt
1/2 cup oil
1/2 cup buttermilk
Beat eggs and sugar, vanilla until light.
Beat in oil. Add sifted flour and bicarb. Mix in buttermilk . Do not over mix!
Bake at 180deg for 17mins
Milk tart filling
2 1/2 cups milk
Pinch of nutmeg
2 tbl butter
1/2 cup sugar
2 tbl flour
1 tbl maizena
Warm milk, nutmeg and butter. Beat eggs and sugar well. Add to this flour and maizena. Beat until there are no lumps. Slowly add to the milk. Whisk and cook on medium heat until thick. Allow to cool.
Fill into piping bag with star nozzle
Hollow out cupcakes and fill with cream. Sprinkle with cinnamon.
