Moegsida’s Cheesy butternut pasta

500g of macaroni
1 medium sized butternut
2 tablespoons of butter
1/2 cup of vegetable stock
3/4 cup of milk
1 teaspoon of paprika
1 cup of mature cheddar
Salt and pepper
Sprinkle of parsley and feta before serving

1. Cook macaroni as per package instructions
2. Peel and de-seed butternut and slice into cubes and boil until tender
3. Melt butter and set aside
4. Put butternut, milk, stock, paprika, salt and pepper into a blender and blend until smooth
5. Mix into macaroni
6. Add cheese and mix until melted.
7. Serve with parsley and feta if desired
