This is a favourite of mine that has been tested and tried many times!
Ingredients:
2 ½ cups – All purpose flour
½ cup – Cocoa powder
2 ½ tsp – Baking powder
1 1/2 tsp – Baking soda
1 tsp – Salt
1 tsp – Cinnamon
3/4 cup – Butter
2 cups – White sugar
3 – Eggs
2 ½ tsp Orange zest
2 tsp – Vanilla
2 cups – grated Zucchini
1/2 cup – Milk
1 cup – Walnuts, chopped
2 cups icing sugar
Method:
Pre-heat oven to 350F. Grease and flour your favourite Bundt pan.
Combine the flour, cocoa, baking powder, baking soda, salt and cinnamon.
In a large bowl, combine butter and sugar, then beat in eggs.
Stir in 2 tsp of the orange zest, vanilla and zucchini.
Stir in dry ingredients, plus milk and nuts. Pour into prepared pan.
Bake at 350 for 1 hour.
Combine icing sugar with some orange juice and/or milk and ½ tsp orange zest. Spread over warm cake.
