Neerasha’s Almond cookies – Banting

Makes 25 little biscuits
This is a Banting cookie

1 cup almond flour
3/4 cup desiccated coconut
1 tsp baking powder
1tsp ginger
1/2 cup coconut oil
1 egg
1/2 cup cashew nut chopped roughly
Or you can use macadamia nuts
1tsp cinnamon you could add more if you wanted.
1/2 tsp all spice
1 tsp vanilla essence
2 Tblsp Xylitol

Mix all ingredients in a bowl.
Take a tsp of the mixture and roll into balls and gently press with a fork.
Place on grease proof paper
Bake in a preheated oven at 180 degrees for 15 mins.
Cool then melt 20gr of 85% dark chocolate and sprinkle over cooled biscuits.
