Neerasha’s Turkey mince curry with peas and boiled eggs

I have also made this with sweet potato it has to be the white sweet potatoe and not the orange.

Recipe
500gr turkey mince (you could use mutton or chicken mince)
In a pot heat 2 Tablespoons coconut oil and add the following:
1/2tsp cumin seeds
1/2tsp mustard seeds
1/2 tsp fennel seeds
4 coriander seeds
2 cardamom pods
2 cinnamon sticks

Let it start to pop then add 1 small onion chopped fry till slightly turning brown.
Now add a tsp each of ginger and garlic and stir.
Add salt to taste 3 tsp masala and a tsp of chillie powder.
Your masala may vary in strength mine is very mild.
Stir add a tsp of Xylitol now add the mince and fry.
Add a curry spoon of water to prevent sticking.
Cook for 15min adding a little water at a time if it dries out.
Add 3 grated tomatoe fry then add the peas and cook for a further 5min.
Add boiled eggs and garnish with coriander.
Serve with roti, or cauliflower rice.

It is Banting friendly.
