Cut off the stalks and base of the bulb.
Split the baby fennel in halves and remove outer leaves until you have the tender hearts. Toss in olive oil, black pepper and garlic salt.
Place in a greased oven proof dish and roast for 30mins until you see brown flecks and caramelised.
