4 Eggs – hard boiled
1 large finely chopped onion
1/4 tsp mustard seeds
1/2 tsp crushed garlic
1 tsp curry powder
Curry leaves
2 tbsp olive oil
Salt to taste
Method:
Heat oil, add mustard seeds.
When it stops popping add curry leaves and onions.
Fry until golden then add crushed garlic paste and curry powder.
Add halved boiled eggs and toss gently in onion mixture.
Garnish with fresh coriander.
