This quantity makes 10
4 tbspn Coconut flour
1/2 tsp Baking powder
1/2 tsp Salt
3 tbspn Xylitol
10 tbspn Full cream milk
4 tbspn Coconut oil/Butter
1 tsp vanilla essence
1. Melt coconut oil/butter in the microwave for 25 secs and let it cool otherwise you will have scrambled eggs!
2. Beat eggs with milk, Xylitol, salt , vanilla essence and coconut oil.
3. Add coconut flour and baking powder. Beat until smooth and consistency of pouring cream. 4. Place 2 tbspn of mixture into a heated non stick pan on medium heat. Add couple of drops of coconut oil to allow it to brown.
Flip over carefully when you see small bubbles start to form. Cook until golden brown.
Serve with the strawberry coulis
