3 Eggs per person
5 button mushrooms
2 tomatoes
1 onion
1/2 green pepper
Dried herbs
1 tbspn Butter
1 tbspn olive oil
2 tbspn milk
Salt and pepper
Please note that I am cooking for 3 persons – adjust ingredients
Filling:
Heat olive oil and add onions, when translucent add peppers and mushrooms. Stir fry for 3 mins then add diced tomatoes. Add salt and pepper and dried herbs.
Omelette:
Beat together 3 eggs with milk and add salt.
Heat butter in a non stick frying pan and add eggs.
Draw the eggs with a wide spatula to obtain an even thickness all around.
When almost set add filling to one half of the eggs.
Carefully flip the other half over the filling and cook for a few minutes until the eggs are completely cooked. Slide off the pan onto a plate. S
erve with a salad.
PS: You can use any filling, eg chicken, cheese etc to suit your taste buds
