I used a punnet of broccoli
Red, green and yellow peppers cut in chunks
Patty pans – sliced
1 large onion
1 tbsp olive oil
Fresh parsley and basil
Wash broccoli and cook in microwave with a little water for 3 minutes.
Heat oil, add the onions and once sautéed, add the peppers and mushrooms.
Add salt and pepper and stir fry for 3 minutes.
Strain the broccoli florets and add to the vegetables.
Toss gently and cook for another 3 minutes.
Add zucchini spaghetti and toss until well coated and cook for 2 minutes.
Add chopped parsley and basil.
Serve with cheese sauce.
Ps: I had mine plain as it was so tasty that I didn’t want to spoil the fresh taste of vegetables with a sauce.
