Banana Caramel Fridge Tart

Granola bars

 

2 cups steel cut oats
¼ cup Sunflower Seeds
½ cup dried Cranberries
½ cup sliced Almonds
¼ tsp Salt
½ cup Almond nut Butter
¾ cup Maple syrup
1 tbsp Coconut Oil
3 tbsp Brown Sugar
mini Chocolate Chips (optional)

1. Preheat oven to 350 degrees F
2. Line baking tray with tinfoil.
3. Mix Oats, Sunflower seeds, Cranberries & Almonds altogether. Spread mixture on a cookie sheet and toast in preheated oven for about 8 minutes. Return mixture to bowl.
4. In a medium saucepan mix together Salt, Peanut Butter, Honey, Coconut Oil & Brown Sugar.
5. Bring to a boil over medium heat, Stir.
6. Pour over Oats mixture and stir well, add chocolate chips if using.
7. Pour into baking tray. Press mixture down into with a spatula.
8. Bake for approximately 20 minutes.
9. I used a biscuit cutter about 5 minutes after it came out of the oven to cut into rusk size fingers. I found it much easier than cutting when completely cold.

Cauliflower Rice Sushi

Cauliflower Rice Sushi 
(Gluten and Grain Free)
Yield: 3 rolls
Serves: 2
Ingredients:
½ head cauliflower
1 Tbsp apple cider vinegar
¼ tsp sea salt or sea seasonings
½ tsp dulse flakes
½ tsp coconut sugar or liquid sweetener
3 nori sheets

Sushi fillings:
avocado
cucumber, sliced thinly length ways
carrot, sliced thinly length ways
sauerkraut or kimchi
pea sprouts
radishes, sliced
lettuce leaves
asparagus

Method:
Break the cauliflower into florets. Steam for 6 minutes.
In a food processor, process the steamed cauliflower until it is rice-sized pieces.
Transfer the ‘rice’ to a glass or wooden bowl. Add the apple cider vinegar, salt, dulse flakes and coconut sugar, while fluffing and separating the ‘rice’ with a spoon. Set aside to cool for 15 – 20 minutes – this is important, otherwise the dampness of the cauliflower will tear the nori sheets and you’ll have a big sloppy mess on your hands. If you can make the cauliflower rice a few hours ahead of time that’s perfect.
On a bamboo sushi roller, lay a sheet of nori shiny side down.
Add ½ cup – 1 cup ‘rice’ to the center of the nori sheet, spread it out leaving about 1 inch on the top and bottom of the sheet with no rice. Press the rice down firmly.
Add the vegetables, starting with laying the lettuce leaves on the rice, then adding sliced vegetables.
Slightly wet the 1 inch edge of the nori sheet that is farthest from you with damp fingers. Pick up the edge closest to you and tightly but gently roll away from you, letting the wet nori edge stick to the roll, then let it sit for a minute or so to “stick”.
Use a wet, sharp knife to slice into pieces.

Unbaked Blackberry Cheesecake

Unbaked Blackberry Cheesecake  

Mix all the ingredients and arrange in small glass bowls or one large dish
200 g fresh blackberries
250 g cream cheese
125 g mascarpone cheese
125 ml (½ c) fresh cream
rind of 1 lemon
30 ml berry sugar

200 g Crumbed biscuits – it should be a bit chunky
40 ml margarine – melted
30 ml coconut

Decorate with extra blackberries
Puree the blackberries.
Mix blackberries, cream cheese, mascarpone cheese, fresh cream, lemon rind and berry sugar. Best to use a hand mixer, and whip till smooth and well blended.
Mix the biscuits, margarine and coconut till wet and then use as indicated below.
Place a layer of the biscuits in your serving dish, then top with a 1/3 of the cream cheese mixture, and repeat till you have 3 layers of biscuits and end with cream cheese.
Garnish with additional blackberries.
Wrap your bowl (glad wrap) and leave in the fridge for a minimum of 2 hours and serve.

Some tips to remember if you wish to substitute the following
• Eggs
• Milk
• Margarine / Butter

1 egg = Mix 1 TBS Flaxseed Meal with 3 TBS warm water. If you only have Flaxseed and not Meal, put the seed in a coffee grinder and grind to powder and Voila, you have Flaxseed Meal.
Let is sit for around 5min and you’ll see the consistency looks like an egg then it’s good to use!
OR
1 egg = 1 banana
OR
1 egg = ¼ cup applesauce

Milk = Organic Almond Milk or Organic Soy Milk

Margarine / Butter = Sweet Baking use Coconut butter/oil
*I usually do half the sugar in recipes for baking especially when I use coconut butter/oil because it’s naturally sweet as well.
Margarine / Butter = Savoury Baking – Olive Oil.
Margarine / Butter = Sweet or Savoury Baking – Earth Balance’s Organic Butter
