Easy, quick and tasty bread and butter pudding – a winner!
Ingredients:
400g brioche buns (use any type of bread)
600ml milk
200g mixed dried fruit( increase to 450g if you prefer lots of fruit)
50g sugar (increase to 100g for a sweeter end product)
50g self-raising flour
2 tsp mixed spice
2 eggs
100 ml melted butter
Method:
In a large bowl tear up bread and add milk and allow to soak for 10 mins.
Using your hands or a wooden spoon, mash it all up to combine.
Stir in dried fruit and sugar.
Add self-raising flour and mixed spice.
Finally add beaten eggs and melted butter.
Pour into a rectangular or square baking tin approx 20cm x 25 cm and bake for one and a half hours at 150 deg C.
Turn up the heat to 180 and cook for another 10 mins or so until pudding browns. Excellent warm with custard or eaten cold.
If cut up into slices sprinkle with sugar.
