I drizzled Butterscotch dessert sauce over the loaf while warm
Ingredients
2 cups all purpose flour
2 banana mashed(very ripe)
18-20 dates pitted & chopped)
1 cup milk
1 tsp vanilla essence
1/2 cup walnuts
3/4 – 1 cup sugar
1 tsp baking powder
1 tsp baking soda
1/4 cup vegetable oil
50g butter
salt a pinch
Method
-Pre heat oven to 100’C and toast the walnuts in the tray for 5-8 minutes so that the skins are removed easily.Chop small and keep aside.
-Preheat oven to 180’C and line a 12*8 ” pan with parchment paper at the bottom,coat the sides with butter.
-Sift the flour and add baking soda,baking powder and salt.Combine well ,keep aside.
-Mash the peeled bananas with a fork or in a blender.Keep aside.
-Cream the butter , oil, vanilla essence and sugar until smooth and combined.
– In a microwave safe bowl,add in the chopped dates with milk and heat on high for 2-3 minutes until dates are softened or leave soaked overnight.
-Cool it down completely.Blend this mix in a blender till it forms a smooth paste.
-Add the paste,mashed bananas to the creamed butter sugar mix.Add in the flour slowly and make a batter without lumps.Add in the toasted walnuts,and stir.
-Pour in the desired baking tray and place it in the oven.bake for 30-35 mins or till the tooth pick inserted comes out clean.Cool on wire rack
NOTES
* You can use oil alone by replacing the amount of butter with oil.
* I have used 3/4 th cup of sugar,yields a moderately sweet cake.Increase upto 1 cup if you desire more sweet.
