 TRH Preshana's Fairy cakes with strawberry jam and fresh cream2

100g butter
100g caster sugar
2 eggs
1 tsp vanilla essence
100g self raising flour
1/2 tsp baking powder
1 tbsp milk
jam

  1. Preheat oven 180’c
  2. Cream butter and sugar, add eggs, one at a time beat well
  3.  Add sifted flour and baking powder
  4. Add vanilla and milk.Mix well.
  5. Put a teaspoonful of cake batter into cupcakes, add 1/2 tsp jam to the centre and put another teaspoon of batter over the jam.
  6. Bake for 15-20 mins or until done.
  7. Pipe fresh cream over to decorate
