Preshana's Madeira Cake

I tweaked this recipe slightly.
I added 2 tsp of vanilla essence.
Made a plain Madeira loaf and to the second cake I added 200 g dried fruit and nut( apricots, prunes, dates, glaze cherries, pistachios and pecan nuts.)

My idea of a fruit cake😜more cake less fruit
NB: To prevent fruit sinking to the bottom of the cake, coat them with a sprinkling of flour.
125g butter
1⁄2 cup oil
1 1/4 cup sugar
4 eggs
1 1/2 tsp vanilla essence
1/8 tsp almond essence(optional)
3 cups self raising flour
1 tsp baking powder
1 cup milk.
Preheat over 180’C
Cream butter, oil and sugar
Add eggs and essence
Sift dry ingredients and add alternately with milk.
Add fruit at this stage.
Pour into 2 greased loaf tins and bake for about 1 hour depending on your oven,
