I have been using this recipe for years and it never fails to please.
Base
2 cups self raising flour
1/2 cups sugar
135ml butter
1 egg
Custard
1 litre milk
2 eggs
1 cup sugar
5Tbspn cornflour
2 tsp vanilla essence
Cinnamon to sprinkle
Method.
Preheat oven to 180’C
Mix flour and butter to resemble breadcrumbs
Beat 1 egg,1/2 cup sugar and 1 tsp vanilla essence until light and fluffy, mix with flour to form a soft dough.
Grease a baking pan and press dough to form base.Prick and bake for 15-20 mins
Custard
Boil milk
Beat together 2 eggs,1 cup sugar and 1 tsp vanilla essence until fluffy and cornflour and beat well
Add to milk and stir continuously until custard is thick.
Pour over base, allow to cool and sprinkle liberally with cinnamon
