A lovely moist cake, flavoured by whatever yoghurt you happen to have in your fridge.
1 cup plain yoghurt
1 cup vegetable oil
2 cup caster sugar
3 cup self-raising flour
Mix all ingredients together until smooth.
Pour into a greased and lined standard sized loaf pan.
Bake at 160C for 1½ hours, or an hour if in a fan forced oven.
Test by checking with a skewer.
I tweaked this recipe slightly by adding 1/2 tsp bicarbonate soda, a pinch of salt and 1 tsp of vanilla essence.I iced the cake with fresh cream.
