Preshana's Oranges cupcakes with fresh cream
A dream come true – you have to make this immediately … Ingredients:
170g castor sugar
2 eggs
1/2 cup oil
1/2 cup plain yoghurt
zest of 1 orange
juice of 1 orange( about 2 Tbspn)
1 cup self-raising flour
1 tsp baking powder
pinch salt
Method:
Preheat oven to 180’C, place cupcake cases into muffin pan.
Cream together castor sugar and eggs, one at a time.
Add oil, orange juice and yoghurt, mix well.
Add sifted dry ingredients
Pour batter 3/4 way up cupcakes and bake until the cupcakes turn golden brown and the skewer comes clean
Fresh cream flavoured with Orange blossom water
300 g tub fresh cream
2 Tbspn sugar
1/4 tsp orange blossom water
Whisk until fresh cream is firm enough to hold on the Whisk pedal
