Ingredients

Batter

Topping

  • 300 g tub of fresh cream
  • 2 Tbspn sugar
  • 1/4 tsp orange blossom water

Instructions

Batter

  1. Preheat oven to 180C/350F, and place cupcake cases into muffin pan.
  2. Cream together castor sugar and eggs, one at a time.
  3. Add oil, orange juice, and yogurt, and mix well.
  4. Add sifted dry ingredients.
  5. Pour batter 3/4 way up the cupcakes and bake until the cupcakes turn golden brown and the skewer comes clean.
  6. Depending on your oven and the size of the cupcakes, this can be up to 20 minutes

Topping

  • Whisk all ingredients until the fresh cream is firm enough to hold onto the Whisk pedal.
