1 1/2 cups all purpose flour
3/4 cup sugar
1/2 tsp bicarbonate soda
1/2 tsp salt
1 Tbspn Cocoa
3/4 cup oil
1/2 cup buttermilk( I used plain yoghurt)
1 Tbspn red food colouring( I used few drops gel colour)
1/2 tsp white vinegar
125 g butter
2 1/2 cups icing sugar
1/4 cup milk
few drops almond essence
Mix together frosting ingredients thoroughly for 5 minutes
Preheat oven to 180’C
Line cupcake pan
Sift together dry ingredients
Mix together wet ingredients
Combine wet and dry inbred to form a batter
Fill cupcakes 1/2 way up.
Bake long enough for skewer to come clean
My kids request. I used the extra batter to make mini red velvet donuts.
