1 courgette
1/4 – 1/2 large red onion finely sliced
5-6 mint leaves
5-6 sprigs of parsley (leaves only)

I tsp olive oil
juice of 1/2 a lemon
salt and pepper to taste
small piece of feta cheese.

Method
Use a potato peeler to create the ribbons, chop herbs and onion fine, break up the feta.

Make the dressing by mixing the oil, lemon juice, salt and pepper
Tossing into the salad about 5-10 minutes before serving.
