I researched lots of recipes and adapted the ratio of ingredients to what I had in my cupboards. My recipe has:
150g rice crispies
200g marshmellows (I had pink large ones that I cut into small piece)
50g butter (if you using unsalted add 1/8 teaspoon salt.
1/8 tsp essence of choice( I used cream essence)
To drizzle
75g milk chocolate(melted in a glass bowl over a pan of water)
75g white chocolate
Line a square/ rectangular tin with clingfilm, foil or grease proof paper.
Place rice crispies in a large bowl.
On medium heat melt the butter, add the marshmellows and essence, stir continuosly until marshmellows have melted completely.
Add the melted marshmellow to the rice crispies, and mix quickly using a spatula.
Turn cover the mixture onto your tray and press down, gently
Serve as is or drizzle chocolate over like I did, but drizzle chocolate over before allowing to set in the fridge.To drizzle the chocolate, I poured the chocolate into a ziplock bag, poked a small hole at the end and drizzled over diagonally in opposite directions
