3/4 cup sugar
1 1/2 Tbspn cocoa
100g dedicated coconut
250 g self raising flour
1/2 tsp vanilla essence
Preheat oven 180’C
Cream the butter and sugar, add the eggs, mix well and add the rest of the ingredients to form a dough
Leave dough in fridge for 15-20 mins to firm up
Roll dough on cling film to 5mm thickness, Score dough and cut into shapes
Bake for 12-15 minutes
Sandwich together when cold with melted chocolate.
