Preshana’s Satsuma and Cardamom Cake

1 cup sugar
1 cup oil
4 eggs
2 cups self raising flour
1 tsp baking powder
1 1/4 tsp ground cardamom
3/4 cup satsuma juice
2 Tbspn candied satsuma

1/2 cup icing sugar
3 1/2 tsp satsuma juice
pinch cardamom

Mix together all the glaze ingredients to form a thick paste.
Preheat oven to 180’C
Cream together eggs, sugar and oil until light and fluffy.
Add self raising flour, baking powder and ground cardamom alternatively with juice.
Bake long enough for the skewer to come clean

Thanks Gail Haselsteiner for sharing your Orange cake Recipe, it was the inspiration to this cake. I tweaked the ingredients and quantities slightly. I managed to make a medium round and medium loaf from these quantities.
