2 cups basmati rice
1 Tsp oil
1 cinnamon stick
2 cardomom pods
1/2 tsp cumin seeds
1/2 onion finely chopped
1/2 tsp tumeric powder
1/2 cup frozen vegetables
Soak rice while you prepare other ingredient, wash and place in a sieve.
Heat oil, add cinnamom stick, cloves,cardamom pods, cumin seeds and onion finely chopped, when the onion browns slightly , add frozen veg, cook for 2 mins.
Add the rice, mix well for oil to coat rice grains, cook for 2 mins and add 4 cups of water and a few stands of saffron.
Once the water boils cover the pan and turn the heat off.
Remove the lid after 15 mins and fluff rice up gently with a fork from the sides of the pan to the centre.
Toss in roasted nuts just before serving so they will remain crunchy.
You could add raisins or dried berries as well.If you don’t have saffron 1/2 tsp tumeric powder.
