Ingredients
Cupcake Batter
- 1 1/2 cups all-purpose flour
- 3/4 cup sugar
- 1/2 tsp bicarbonate soda
- 1/2 tsp salt
- 1 Tbspn Cocoa
- 3/4 cup oil
- 1/2 cup buttermilk (I used plain yoghurt)
- 1 egg
- 1 Tbspn red food colouring (I used a few drops of gel colour)
- 1/2 tsp white vinegar
Frosting
- 125 g butter
- 2 1/2 cups icing sugar
- 1/4 cup milk
- a few drops of almond essence
Instructions
- Mix together frosting ingredients thoroughly for 5 minutes and set aside
- Preheat oven to 180C/350F
- Line cupcake pan
- Sift together dry ingredients
- Mix together wet ingredients
- Combine wet and dry ingredients to form the batter
- Fill cupcakes 1/2 way up.
- Bake long enough for a skewer to come clean
- Use the extra batter to make mini red velvet doughnuts.
