Red Velvet Cupcakes with Butter Cream Frosting

Description

Craving something sweet?  Indulge in our irresistible Red Velvet Cupcakes!  Soft, fluffy, and topped with luscious cream cheese frosting, it’s the perfect treat to satisfy your cravings.


Ingredients

Units Scale

Cupcake Batter

  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 tsp bicarbonate soda
  • 1/2 tsp salt
  • 1 Tbspn Cocoa
  • 3/4 cup oil
  • 1/2 cup buttermilk (I used plain yoghurt)
  • 1 egg
  • 1 Tbspn red food colouring (I used a few drops of gel colour)
  • 1/2 tsp white vinegar

Frosting

  • 125 g butter
  • 2 1/2 cups icing sugar
  • 1/4 cup milk
  • a few drops of almond essence

Instructions

  1. Mix together frosting ingredients thoroughly for 5 minutes and set aside
  2. Preheat oven to 180C/350F
  3. Line cupcake pan
  4. Sift together dry ingredients
  5. Mix together wet ingredients
  6. Combine wet and dry ingredients to form the batter
  7. Fill cupcakes 1/2 way up.
  8. Bake long enough for a skewer to come clean
  9. Use the extra batter to make mini red velvet doughnuts.
