250g butter
1\4 cup castor sugar
1T instant coffee

1 T hot water
± 2 1\2 cups flour.
Dissolve coffee in water
Cream butter and sugar until light and fluffy
Add in coffee mixture
Fold in flour
Pipe or cut into shapes.
Bake at 180 for 10-15 minutes.
Coffee Filling
90g butter
1 cup icing sugar
2 tsp instant coffee
1 T hot water.
Dissolve coffee in hot water
Cream butter and sugar,add coffee and beat well.
Sandwich biscuits together coffee cream.
Dust with icing sugar.
