Romany Cream Biscuits

TRH Romany Cream Biscuits

250g butter
1 1/4 cup sugar
5 ml vanilla essence
30 ml oil
1 1/2 cups roasted desiccated coconut (roast in a pan until light brown)
500 g Self Raising Flour
Pinch of bicarbonate of soda
5 ml baking powder
2 heaped tbsp cocoa powder
2 eggs
Melting chocolate for sandwiching biscuits together (I used Cadbury Dairy Milk choc)

Cream butter & sugar
Add essence, oil and roasted coconut
Sift flour, baking powder and cocoa powder
Lastly add eggs & mix to form firm dough
Cut with cookie cutter & place on a greased baking tray. Scratch the dough with a fork
Bake @ 180 degree for 10 min or until done
Once baked & cooled sandwich biscuits together with melted chocolate
