375 ml Castor Sugar
500 ml Cake flour
5 ml ground cinnamon
3 ml ground ginger
2 l bicarbonate of soda
750 ml grated carrots
125 ml seedless raisins
125 ml chopped pecan nuts (optional)
1 tsp mixed spice
Whisk together eggs+sugar till light and fluffy.
Add oil beat well.
Add sifted dry ingredients add to beaten mixture.
Fold in carrots and raisins+ nuts. I used a round ring tin u may use 2 rounds.
Bake in pre-heated oven 180 degrees 35-40 min.
Cream cheese icing
100 g butter/margarine
125 g smooth cottage cheese
500 ml icing sugar
10 ml lemon juice
For icing combine all ingredients together and spread!
U can also layer in round baking tins
