2 cups pitted dates
2 cups coconut
1 cup extra coconut
Put both dates and coconut into a food processor and blitz till a smooth paste forms
Roll into balls about a teaspoonful at a time.
When all the balls have been rolled then roll them into the extra coconut.
Place in an airtight container and place in the fridge for a couple hours.
PRO’S: High in fiber; low in fat
CONS: Addictive
Will keep for weeks in the fridge. Enjoy.
